José María Expósito started at APZ in 1988 and has run it since 2012. He is still behind the bar, and the cooking hasn’t changed: homemade food at neighbourhood prices.

What you eat at a traditional Spanish bar
Jonathan Díaz, who has been in the kitchen for more than 10 years, cooks the daily staples: tripe with chickpeas, meatballs, Spanish omelette and patatas bravas with a proper kick. The tapas are chalked up on the board, with no tourist menu and no photos at the door. At lunchtime, locals and people working nearby come in for the set lunch menu.
